Kopi Luwak coffee is the most expensive, exclusive coffee in the world. To be created, a civet must consume coffee beans, and the beans must pass through the animal’s digestive track. During this process, the enzymes found in the civet’s stomach alter the flavour of the bean, making it richer, smoother, and more earthy with chocolate undertones. This process also reduces the acidity and bitterness of the bean. Kopi Luwak coffee is highly sought after, costing over $500 a pound, and civets are often kept in inhumane farms in order for distributors to fulfill demand. This coffee seeks to make a difference in this industry by providing coffee that features the same tastes and textures as Kopi Luwak coffee, without the use of animals.
